Ingredients

Extra virgin olive oil, flavoring.


Instructions for use

Use sparingly. Truffle oil has a very intense flavor, so a small amount is enough to season dishes. Typically, one teaspoon per serving is sufficient. Always close the bottle tightly after use to preserve the aroma and freshness.


Storage

Store at room temperature away from light and heat sources.

Recipes

Risotto with saffron and dressing made with EVO oil flavored with black truffle by SACCHI

Serves 4

  • 320 g of Carnaroli rice
  • 30-50 ml of dressing made with EVO oil flavored with black truffle by SACCHI
  • 2 sachets of powdered saffron
  • 40 ml of dry white wine
  • 1 shallot
  • 1200 ml of vegetable broth
  • 30 g of butter
  • 40 g of grated Parmesan cheese
  • Salt and pepper to taste

Method

Bring the broth to a boil in a saucepan. In another saucepan, sauté the shallot in a drizzle of oil, add the rice, and deglaze by pouring in a little white wine. Once the alcohol has evaporated, add the first ladle of broth and the saffron. Repeat by gradually adding the broth and stirring often for about 20 minutes until the rice is creamy and ‘al dente’.

Remove from heat and stir in the parmesan and SACCHI black truffle oil. If necessary, adjust the creaminess with a knob of butter.
