Ingredients

Sunflower seed oil, pasteurized EGG, wine vinegar, extra virgin olive oil, summer truffle (Tuber aestivum Vittad.), salt, flavoring.


Instructions for use

Serve cold. It is recommended to use approximately 15-30 grams (1-2 tablespoons) of mayonnaise per serving. Do not heat, do not bring to a boil.


Storage

Store at room temperature away from light and heat sources. Once opened: store in the fridge between 0 and 4°, consume within 4-5 days.

Recipes

Steamed lemon sole, SACCHI truffle mayonnaise, and marinated sauerkraut

Serves 2

  • 4 large soles
  • truffle mayonnaise SACCHI as needed
  • 1 purple or white cabbage
  • 20 ml vinegar
  • sugar to taste
  • 2 bay leaves
  • salt, pepper, oil as needed

Method

Clean the soles thoroughly, remove the entrails, take off the skin, and rinse them under cold running water. Once cleaned, cook them in a steamer (or gently boil them in water and lemon) for 10-15 minutes until done. Prepare the sauerkraut by slicing it thinly, if possible with the help of a mandoline, and cook it in a pan for 15-20 minutes over medium-low heat with bay leaves, vinegar, sugar, extra virgin olive oil, and salt. Once ready, plate the sole fillets, accompanied by a generous amount of SACCHI truffle mayonnaise and the sauerkraut. To fully enjoy the recipe, gather all the ingredients of the dish with a fork in every bite and savor them together. Enjoy!
