Ingredients

Durum WHEAT semolina, water, porcini mushrooms (Boletus Edulis and related group).


Instructions for use

Cook in plenty of salted boiling water for 8 minutes and season to taste.

Store at room temperature, away from light and heat sources.

Tagliatelle with SACCHI porcini mushrooms, zucchini cream, mint, and zucchini flowers

Serves 2

  • 250 g of SACCHI porcini mushroom tagliatelle
  • 3 courgettes
  • 8 courgette flowers
  • 2.5 L of vegetable broth
  • mint leaves to taste
  • EVO oil
  • 30 g of butter
  • Salt and pepper to taste

Method

Wash and cut the zucchini, then boil them in lightly salted vegetable broth. Once ready, drain and blend with an immersion blender, adjusting the consistency with the remaining broth, extra virgin olive oil, salt, and pepper. Tear the mint leaves by hand to prevent oxidation and set aside. Cook the SACCHI porcini tagliatelle in a pot of plenty of boiling salted water, finishing the cooking in the pan with butter, tossing vigorously. Plate the dish starting with the warm zucchini cream, then a nest of tagliatelle, and top with raw zucchini flowers, mint leaves, and a drizzle of extra virgin olive oil.
