Recipes
Tonnarelli Cacio e Pepe with truffle SACCHI
Serves 2
- 400 g of fresh tonnarelli (or fresh tagliatelle)
- 300 g of medium-aged Pecorino Romano DOP
- Truffle MIX BAGS as desired
- Summer truffle carpaccio SACCHI
- About 50 ml of water
- Ground black pepper
Method
In a large pot, bring salted water to a boil and add the tonnarelli. In a bowl, grate the pecorino romano and emulsify it with a bit of the cooking water to create a smooth, homogeneous cream. Add crushed black pepper to taste and our Truffle Mix SACCHI as desired. Once the pasta is cooked, combine it with the pecorino cream off the heat, mixing vigorously. Serve on a plate, garnishing with a sprinkle of Truffle Mix and a few slices of SACCHI Summer Truffle Carpaccio on top of the tonnarelli.
Enjoy!
