Ingredients

Black olives, olive oil, salt, flavoring.


Instructions for use

Stir the sauce well before use. Gently heat without bringing to a boil, or spread on warm toasted bread or pour over freshly drained pasta.


Storage

Store at room temperature away from light and heat sources. Once opened: store in the fridge between 0 and 4°, consume within 4-5 days.

Recipes

Orecchiette pasta with SACCHI black truffle olive cream, fennel, orange and wild fennel sauce

Serves 2

  • 250 g of fresh orecchiette
  • 100 g of black olive cream with truffle flavour SACCHI
  • 1 fennel
  • 2 potatoes
  • Orange zest
  • 1 bunch of wild fennel
  • Extra virgin olive oil, salt and pepper to taste

Method

Clean and cut the potatoes and fennel into large pieces, cooking them together in a saucepan with a bit of extra virgin olive oil and some water. Once cooked, blend with a bit of oil if necessary and keep warm. Separately, cook the orecchiette in plenty of boiling salted water, drain, and toss them in a pan with the olive sauce flavored with truffle SACCHI and a bit of cooking water. Assemble the dish, starting with the fennel sauce, followed by the orecchiette, and finishing with chopped wild fennel and orange zest on top.
