Ingredients

Cream, rice flour, bianchetto truffle (Tuber borchii, Vittad.), Grana Padano cheese, white truffle (Tuber magnatum Pico), salt, flavoring.


Instructions for use

To prevent the sauce from separating, it is important to heat over medium-low heat and not bring it to a boil. Cold: Use directly. Hot: Heat slightly to preserve the truffle aroma. Avoid bringing to the boil.


Storage

Store at room temperature away from light and heat sources. Once opened: store in the fridge between 0 and 4°, consume within 4-5 days.

Recipes

Egg tagliatelle with Alfredo SACCHI sauce, pumpkin and salted ricotta cheese

Serves 4

  • 480g of fresh egg tagliatelle (or SACCHI truffle tagliatelle)
  • 120g Alfredo SACCHI sauce
  • 300g pumpkin
  • salted ricotta to grate (or pecorino)
  • Extra virgin olive oil, salt, and pepper to taste

Method

Cook the peeled and roughly chopped pumpkin in a preheated oven at 180-200 degrees for about 25-30 minutes. Once cooked, blend in a mixer with extra virgin olive oil, salt, and pepper; if necessary, add a ladle of water or a little cream. Cook the tagliatelle in plenty of salted water in a large pot, drain them in the pan, and toss with the Alfredo sauce SACCHI. Assemble the plate by first placing the pumpkin cream, then a nest of tagliatelle, and finish with grated salted ricotta. Enjoy!
